Best ramen place in Costa Mesa. They have everyone’s favorite like tonkotsu and miso, and also have unique items on the menu like yuzu shio, scallop, combu which are all delicious!!! Recommends gyoza (dumplings) and karaage (Japanese fried chicken) for appetizer. Hiro-san, the owner is super nice and friendly.

Cute place, good atmosphere. You order on a little sheet; I got the "Ramen" (not spicy) with pork broth and pork meat, including all toppings that weren't an upcharge. The pork was tough and the broth extremely undersalted for my preference. I was disappointed that the table spice was only salt, ground chili, and sesame seeds (though the sesame mill was cool). I did take my leftovers home and was impressed by how gelatinous the broth really was. It was much better after adding soy sauce and shichimi and chopping up the pork. I can understand needing to doctor the broth, but needing a knife or to bite the pork slices was really not ideal. I expected better from a 4.7 rating.

Best ramen in the country! Dandan and chicken brother ramen are to die for. The owner (Hiro) is an amazing person and the employees (especially Yuki and Brian) are super attentive and care about their customers a lot.

the ramen was really good! they have a fun ordering system, many customization options! they split our bowl into two when we told them we were sharing, which we've never had anyone do before. it was so thoughtful. the straight noodles were really good! i do recommend blowing on your soup before eating, i definitely burnt my mouth a bit from the hot spicy oil as i was too excited lol. it was such a friendly, tasty place!

At HIDE-CHAN RAMEN, our ramen starts with a slow-simmered tonkotsu broth, cooked for hours to achieve a deep, creamy richness without heaviness. We use traditional Hakata-style thin noodles β€” firm, springy, and designed to perfectly hold the broth. Every element, from soup to noodles, is balanced for clarity, depth, and comfort. Rooted in Hakata tradition and refined through decades of craftsmanship, our ramen is honest, rich, and deeply satisfying β€” made the HIDE-CHAN way. Do respect the guy who is always dedicated to one thing for his entire life !
